This 1,000-nit difference is noticeable, but the boost, in my experience, doesn’t lend much more to visibility than what I enjoyed with the original version of the Watch Ultra.

So far I haven’t found a way to do so, short of editing the watch face to turn night mode off or on that way. Which is an awfully slow way to do it. I read that in the first ultra you could use the crown to dial it on or off. Not so with the 2. If anyone’s found a quick way to do it, please let me know.
