I would agree with previous comments that if you want to fly and get the experience of aviation as a whole go 15T or 15U. That said you will generally spend about a year in a maintenance company before going to a flight company. In addition there are a couple prerequisites you will need to meet for flying duty as an enlisted soldier.

Well as someone who has worked on both I will say there's not a whole lot of difference. My MOS was 15T but we all crosstrained with 15U. Hawks have a lot of tight areas you'll find yourself wedged in where in Chinooks you USUALLY have more room to get to what you need to reach.
